REALITY: Image of Health

We racked the wine the second time tonight.  Seventy five or more pounds of purple grapes turned ruby liquid in two five gallon carboys.  Removed the must, the top of floating skins and seeds; the bottom is the lees, the small debris and yeast; between the clearing crystal red jeweled wine.  By law each household is allowed to make two hundred gallons–just about the glass each day for each as recommended for the heart.  Ah but the color, the ruby color of the working fermentation does the heart good just to watch before the tasting.
